Roasted Cauliflower Salad

I made this for our camping trip last weekend. Still noshing on it. Tastes better after it's marinated for a day.

Ingredients
2 heads of cauliflower
2 cloves  minced garlic
1/4 c. chopped pepperoncini
1/2 chopped red onion
1 chopped red bell pepper
paprika, cumin to taste
1/2 bunch chopped cilantro
dash of olive oil
splash of balsamic vinegar
splash of rice vinegar
zest and juice of one lemon

Directions

  1. Cut off the florets and rub them with olive oil. Bake at 375 degrees for 20 minutes or so. 
  2. Throw everything in a bowl and mix. Season to taste.

It's that simple and that good.
