Ingredients
2 heads of cauliflower
2 cloves minced garlic
1/4 c. chopped pepperoncini
1/2 chopped red onion
1 chopped red bell pepper
paprika, cumin to taste
1/2 bunch chopped cilantro
dash of olive oil
splash of balsamic vinegar
splash of rice vinegar
zest and juice of one lemon
Directions
- Cut off the florets and rub them with olive oil. Bake at 375 degrees for 20 minutes or so.
- Throw everything in a bowl and mix. Season to taste.
It's that simple and that good.
